Vegetable Rolls with Parmesan Cream

Ingredients

Serbosco PDO Parmigiano Reggiano cream 200 g
thick Greek yoghurt 150
firm green courgettes 3
medium/large carrots 3
thyme  to taste
chives to taste

Preparation

  1. Wash and trim the courgettes and carrots
  2. Slice the vegetables lengthwise to obtain strips
  3. Grill the courgettes on a griddle for 2-3 minutes on each side (if you have new courgettes, you can also leave them raw)
  4. In a bowl, mix the Serbosco Parmigiano Reggiano DOP cream with the thick Greek yoghurt
  5. Add some chopped chives and sprigs of thyme
  6. Mix the creams well and spread the sauce over the vegetable strips
  7. Wrap the vegetables in the cheese and place on a serving dish.
  8. Garnish with more thyme and chives and drizzle the cream cheese over the vegetable rolls
